A Healthy Gut Recipe: Sunny Orange Salad

I love serving some sort of fruit as a side dish with my evening meal.  This Sunny Orange Salad recipe is fabulously delicious, is so very easy to make, and definitely qualifies as healthy gut food.  I care for two little boys twice a week (a 3-year old and a 1-year old), and they both love this fruit dish!  Here’s how it’s made:

Ingredients

1 tablespoon fresh mint, coarsely chopped
1/4 cup orange juice
1 tablespoon honey, plus more if desired
4 cups fresh citrus fruit (such as blood or navel oranges, tangelos, and/or grapefruit)

Steps

  1. Chop mint. Whisk orange juice, mint, and honey until blended.
  2. Peel citrus fruit; cut into 1/2-inch thick slices. Place in salad bowl. Add dressing; toss gently to coat. Drizzle with additional honey, if desired. Serve.
